No-Flour Dark Chocolate Cookies

If you have been looking for a flourless cookie recipe, this is it! These little gems are chock-full of yummy, gooey chocolate! And, they are absolutely delicious!  I originally saw the recipe shared by a friend over on Face Book.  This time I actually remembered to search out the source before I shared it here!  The original recipe can be found here.

While my sweet DIL and her mom and I were chatting about these delicious cookies, we began to brainstorm about how they could be altered into amazing Christmas cookies.  Here are two new versions we came up with. I can’t wait to try them!

Cherry-Chocolate No-Flour Cookies:  Finely chop drained maraschino cherries until you have about 1/8 to 1/4 cup. Make sure that the cherries are well drained.  Mix  cherry pieces into the chocolate cookie mixture before forming dough into balls.  If you cut the cherries into fourths, you could wrap the chocolate dough around a cherry piece before rolling in powdered sugar.

Peppermint-Chocolate No-Flour Cookies:  There are 3 ways to make these peppermint.  1)Crush a handful of peppermint candies or candy canes. Roll the chocolate balls in the crushed candy before baking (instead of rolling in the powdered sugar).  2) Mix about 1/4 c of crushed candy with the chocolate dough before rolling into balls.  3) If you use essential oils, you could also add a few drops of peppermint oil to your dough instead of using peppermint candies.
