Hot Cocoa

Brrr! It is cold outside!! Even here in the south the temperatures are frigid! While we’ve not had any snow or ice, we have had below-freezing temperatures for several days at a time…and today the wind just won’t quit!

On cold days like this, a cup of hot cocoa helps warm the bones…especially while sitting in front of a glowing fire. This recipe came from my favorite Fanny Farmer cookbook and is very easy to make. Enjoy it topped with mini-marshmallows or a scoop of whipped cream.

1/4 c. unsweetened cocoa

2 tbsp. sugar

pinch salt

1/2 c. water

4 cups milk (half and half if you like it creamier)

a few drops vanilla (optional)

Whipped cream or mini-marshmallows

Mix the cocoa, sugar, and salt with the water in a medium saucepan and boil gently for 2 minutes. Add the milk and heat slowly just to the boiling point. Beat well with a whisk, and add a few drops of vanilla if desired. Pour into cups and top with your choice of whipped cream or marshmallows.  Makes 3 large mugs or 6 small mugs.
