Graduation Goodies

I am finally getting the chance to sit down and write another post after a very busy few weeks.  After the Week of Prayer two weeks ago (see previous post), I was able to fly to St. Louis and meet  my sweet aunt Kay, my mother’s youngest sister, and drive with her back to South Carolina.  We have been having a wonderful time remembering the past and making new memories.

Last Saturday was our graduation party for our youngest child.  My 20 years of schooling our kiddlets at home are now officially over.  I am glad that I had the privilege to teach my children.  While some days were certainly worse than others, I think that I can say that the time was well spent.  God has certainly been gracious over the years!  I am proud of the young adults my children have become.  I pray that God will continue to lead and guide them in the next phases of their lives.

Several weeks ago as I was thinking about a buffet menu for Sam’s party, I came across a few recipes on Facebook.  I confess that I have no clue as to their origin…could be pinterest, but I just do not remember.  All I did was copy/paste them into a word document so that I would have them for the party!  Sam was thrilled with Snickers Dip, a peanut butter cheese ball, and orange cream punch along with a cake, fruit bowl, mixed nuts and mints.

Snickers Dip

2 (8oz) blocks cream cheese, softened

8 oz container of whipped topping

1/4 c. brown sugar

4 regular sized Snickers candy bars cut into small pieces

Mix the first 3 ingredients together, and then add the candy bars.  Refrigerate until ready to serve.  I used apple wedges and graham crackers.

Peanut butter Cheese Ball

1 (8oz) block of cream cheese, softened

1 c. powdered sugar

3/4 c. creamy peanut butter

3 tbsp. packed brown sugar

3/4 c. milk chocolate chips

3/4 c. peanut butter chips

Beat cream cheese, powdered sugar, peanut butter and brown sugar in a large mixer bowl until blended. Spoon onto a large piece of plastic wrap. Bring up all four corners and twist tightly, forming it into a ball.  Freeze for about an hour and 30 minutes, or until it is firm enough to keep its shape.  Spread peanut butter chips and chocolate chips on a piece of plastic wrap. Unwrap peanut butter ball and roll in the chips, pressing the chips firmly into the ball. Rewrap the ball and freeze for about 2 more hours.  Let sit at room temperature about 30 minutes before serving with graham crackers, apple slices, or teddy grahams.
