Pear Honey

I can’t believe it has been several weeks since I last wrote a post!  The month of January has been super busy and has just flown by.  It is hard to believe that we are already over half way through the month.

As I was considering what recipe to make so that I could do a post, I noticed a bowl of pears I had sitting on the kitchen counter.  Those pears were purchased almost 10 days ago when they were on sale at one of my favorite stores. Unfortunately, they were hard and green in their package when I got them.  It seemed to take forever for them to soften.  Once they did, I think that the family forgot them, for they were not being eaten.  I knew yesterday afternoon that I had to do so something before they over ripened and would need to be thrown away.  I hate throwing food away!!

I remembered that years ago, my sister-in-law would make some delicious pear honey each fall.  So I did a google search and found a recipe that was pretty simple.   My pears were actually just perfectly ripened for this recipe!  Once I got the pears peeled, cored, and cut up, I just mixed all the ingredients and let it boil until thick.  This recipe could be processed for canning, but I just put it in jars in my fridge.  It makes about 7 cups.

3 lbs. ripe pears

5-1/2 cups sugar

8 oz. can crushed pineapple

1 tbsp. lemon juice

Peel, core, and cut up the pears and place in a large dutch oven.  Add the pineapple, sugar, and lemon juice.  Stir well.  Bring to a boil stirring often and let simmer for several hours.  Mine cooked for about 2-1/2 hours. Remember to stir often so that the sugar doesn’t burn on the bottom of your pan!

The mixture will turn a golden honey color and thicken like honey.  Serve over hot buttered toast or biscuits!
