Cherry-White Chocolate Chip Blondies

I cannot take any credit at all for this recipe.  It was sent to me from Lisa over at Sweet as Sugar Cookies                                                                                   (http://sweet-as-sugar-cookies.blogspot.com/)  Lisa took a recipe from someone else and tweaked it a bit by adding the chips and dried blueberries. I tweaked it a bit more by  using a partial bag of dried cherries, instead of the blueberries.  I also used 1 cup of shortening instead of 1 cup of butter.  Another change I made was to leave out the 1/2 c. of sugar.  The brown sugar was enough sweetening.  The result was an amazing blondie that is extremely addicting!

I’ve been trying to send a weekly care package to my son Ben who is a Knob at The Citadel in Charleston.  Upper classmen are notorious for bothering the Knobs…especially when they see the Knob with what could be a care package from home!  We’ve learned to send smaller packages which can fit into Ben’s Knobbie bag so that he can get the package to his room without drawing any attention to himself!  The small package doesn’t allow much room for homemade goodies, but these treats fit well.  We fill the box, wrapping each blondie or other homemade treat separately, then put the box into a flat-rate envelope and stuff the sides with hard candies and other little treats.  Since it is flat rate, it doesn’t matter how heavy the package is!

1 c. shortening

1-1/2 c. packed brown sugar

1/2 c. sugar

2 eggs

1 tsp. vanilla

2 c. flour

3/4 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1 c. white chocolate chips

2/3 c. dried cherries

Cream the shortening and sugars until well blended. Add eggs one at a time, mixing for about a minute after each egg.  Beat in vanilla.  In separate bowl, mix dry ingredients.  Add dry ingredients to shortening mixture stirring until just blended.  Fold in the chips and dried cherries.  Spread in a greased 9×13 pan. Bake at 325 degrees for about 40 minutes or until a toothpick comes out clean.  Let cool completely.
