Tomato-Basil Baked Fish

Trying to eat a more healthful diet is not always easy or inexpensive.  So many of the healthful foods cost way more than those that are not as good for us.  However, I did find tilapia on sale the other day so I got a package.  Not everyone in my family enjoys fish, but this recipe I found yesterday is very easy and very delicious!  What’s nice about it is that it can be served with a wide variety of fish such as orange roughy, red snapper, or cod.

2 tbsp. lemon juice

2 tsp. olive oil

16 oz. fish fillets

1/2 tsp. dried basil

1/4 tsp. salt

1/4 tsp. black pepper

2 medium tomatoes, thinly sliced

4 tsp. grated Parmesan cheese

Combine lemon juice and oil in a 13×9 baking pan.  Spread it around to cover the bottom.  Place each fish fillet in the oil and then turn over so that  the oil mixture is on both sides of the fish.  Sprinkle fillets with basil, salt, and pepper.  Arrange tomato slices on top of fish; sprinkle with Parmesan cheese.  Cover and bake at 400 degrees for 12-15 minutes or until fish flakes easily with a fork.  Serve with a side of yellow rice.  Makes 3-4 servings.

  1. Jan, this looks so delicious and I can’t wait to try it. We’re actually having fish this evening, and your lovely daughter is here at our home, so I MAY try it tonight. I MAY wait, though, because I want to try some new seasonings that I found at a wonderful new store in Savannah called The Spice Exchange. We’re trying to eat more fish so this will be a welcome addition to my fish recipes.

    I’ve perused your blog a bit, and I really hope to meet you soon. You and I are possibly kindred spirits!

      1. We actually used the Spice and Tea Exchange herbs and it was really tasty. I just need to learn to cook fish a little better. 🙂 I’d like to try your recipe next time. I can use my fresh basil. 🙂 Have you ever used fresh?
